Last weekend I had a HUGE craving for a cheeseburger. Specifically a bacon mushroom cheeseburger. And even though it was freezing out, my awesome boyfriend braved the snow of the backyard to grill them for us. This was not a half-assed cheeseburger! First we cooked the bacon, then sauteed the mushrooms in a tiny bit of bacon grease with some minced garlic. Onions got caramelized in a metric ton of butter. The meat got mixed up with some seasoned salt and some chili pepper. Meat was grilled – bacon and Muenster cheese added and the whole shebang was topped with the caramelized onions and the mushrooms. Look – it’s so tasty!
The potatoes we had are a favorite “recipe” that my mom makes. Everyone loves them. It’s a bunch of cubed potatoes, enough to fill a 13 x 9 pan, about 1/4 cup olive oil and a packet of onion soup mix. Mix it all together (just use your hands!) and pop it in the oven at 375 for 45-ish minutes, until the potatoes are soft when you poke them with a fork. (Yes, I use -ish a lot with the cooking – it all works, I promise!) I like to eat them with a tiny bit of ketchup, but they are really good plain too. I’ve been having a feeling that this would work good with a ranch mix as well, and if I try it I’ll post the results here!
