Honey Balsamic Chicken

I was a bit conflicted the other day when thinking about making dinner when this popped into my head.  Once it was in there though, I thought to myself really, honey and balsamic vinegar together… is that really a good idea? But, in the end I decided that I like honey, and I like balsamic vinegar, so it must be a good idea.  And it was.

I mixed about half a cup of balsamic vinegar and added a couple of tablespoons of honey to it and wisked that together.  I cut two chicken breasts into strips and soaked in the the vinegar/honey mixture for about 15 minutes.  Then I cooked it in a little bit of olive oil.  Once the chicken was out of the pan I cooked down the rest of the marinade and used it to drizzle over then chicken.  I served it over plain rice with yellow beans – I can’t wait to have the leftovers for lunch, it was so good!
